Yes it will and everything is included, you don't need anything else to set it up. The cable comes with a 5-pin connector for the dedicated port on the V2 board

Would this work on the Ender 7 and if so is it a straightforward install or am I going to be swapping connectors etc?

Yes it will work with the connector that comes with it. You will need to install new firmware which is available here: https://www.creality.com/products/cr-touch-auto-leveling-kit?spm=..page_1934481.products_display_1.1&spm_prev=..index.header_1.1

Will this work with a BTT Octopus V1. Board on Marlin (latest Version)

Yes there are 5 pins in the corner of the Octopus V1 but you'll need to replace the JST connection with dupont connectors
